In this part of Suffolk the word would be "shock", although I would say "shook". The term varies across East Anglia - a few mile away it could change. You could tell an 'incomer' by what word they used.

Was flicking through G.T. Cushing's book yesterday while researching on the Thurston's and one caption to a harvest scene refers to them as 'stooks' but that in Thursford they were apparently 'shocks'

A really well organised event, threshing demo was superb. Thanks to all involved.
A binder makes individual sheaves which are stood up in sixes or eights to form shocks or stooks.

It was stooks where I was dragged up.
